Coconut Crème Cupcakes…
I’m reluctant to share this recipe. It’s that good.
It’s kind of my secret weapon.
However, it was shared with me a long time ago and I must pass on the favor.
People have very definite opinions about coconut and you may be thinking of passing by this recipe just because of the name.
BUT… if I didn’t tell you there was coconut in these cupcakes, you would never know!
It really is cream of coconut, not the stringy coconut you may be thinking of and it’s purpose is to deliver moist, rich flavor.
I usually don’t tell people the name until after they try it!
This versatile recipe can be dyed any color and made into cake or cup cakes, or my favorite party size…mini cupcakes.
Mini cupcakes are good bite size fun for grown ups or kids.
I hope you enjoy my very favorite cake recipe (below)!
