Coconut Crème Cupcakes: A Very Versatile Party Recipe

Coconut Crème Cupcakes…

I’m reluctant to share this recipe. It’s that good.

However, it was shared with me a long time ago and I must pass on the favor.

People have very definite opinions about coconut and you may be thinking of passing by this recipe just because of the name.

BUT… if I didn’t tell you there was coconut in these cupcakes, you would never know!20 favorite party recipes including coconut creme cupcakes huntandhost.net

It really is cream of coconut, not the stringy coconut you may be thinking of and it’s purpose is to deliver moist, rich flavor.

I usually don’t tell people the name until after they try it!

This versatile recipe can be dyed any color and made into cake or cup cakes, or my favorite party size…mini cupcakes.

Mini cupcakes are good bite size fun for grown ups or kids.

Coconut Crème Cake Recipe

Box of White Cake Mix

1 Can Cream of Coconut (Coco Loco: usually found in the drink mixer isle)

1 Cup Sour Cream

3 Eggs

1/4 Cup Vegetable Oil

Mix well and Bake at 350º for 20-30 minutes20 favorite party recipes including coconut creme cupcakes huntandhost.net

Cream Cheese Icing Recipe

8 ounces Cream Cheese – room temperature

4 Cups Powdered Sugar

Vanilla to taste

Mix till creamy

Ice cupcakes once completely cooled.
