Women And Their Gift: Robin N.

caramel filled chocolate cookiesThis women is warm, she is seriously funny, generous, honest, loyal, real and downright beautiful. She tells it like she sees it and I enjoy that so much in a friend. Her laugh is spectacular and she is contagious. I can’t wait for you to meet my friend

I love how real Robin is. She would never want you to think she has it all together. But friends – she is a force to be reckoned with. Robin can run circles around me, all with a smile and the biggest lovin heart you’ll ever know. Here are some points I gleamed from my time with her.

1. She didn’t even recognize her gift was a gift until she started walking with the Lord. You can’t know who your maker made you to be if you don’t know your maker. It all starts with that relationship, reading the word and being lead to see yourself through his eyes. Simply stunning.

2. Once Robin recognized her gift and was comfortable using it, God stretched her even more. The thing that comes naturally to you…isn’t where it ends. There is another layer, and I am sure another and another down the road of obedience. God is calling her onward and outward through the same vein he gifted her with.

3. The gift of your gift doesn’t have to be big. Make sense? Even small gestures of your craft will go a long way for someone who needs them. It doesn’t always have to be big and complicated to serve others. The little stuff matters and counts.

4. Set yourself up to serve. Whatever your gift is, be prepared to use it. Robin keeps extra meals in the freezer or doubles dinner on occasion. Then when needs pop up she is prepared to serve. She doesn’t have to let giving set her day or week of course. If you make something, stockpile extra. If your gift is prayer schedule extra time in your day to allow for that unexpected call for prayer. Being prepared to bless others helps you form a habit of putting action to your gift. You will be more likely to act on that nudge and do something when you are one step ahead.

Here is the recipe for Robin’s favorite cookies her grandmother used to make. It is from Pillsbury Bake Off Cookies, Brownies and Bars

Caramel-Filled Chocolate Cookies

1 cup sugar

1 cup firmly backed brown sugar

1 cup margarine or butter, softened

2 teaspoons vanilla

2 eggs

2 1/2 cups Pillsbury BEST All Purpose Flour

3/4 cup unsweetened cocoa

1 teaspoon baking soda

1 cup chopped pecans

48 Rolo Chewy Caramels in Milk Chocolate, unwrapped

1 tablespoon sugar

4 oz. vanilla flavored candy coating, if desired

1. In large bowl, combine 1 cup sugar, brown sugar and margarine; beat until light and fluffy. Add vanilla and eggs; blend well.

2. Lightly spoon flour into measuring cup; level off. In small bowl, combine flour, cocoa and baking soda; mix well. Add to sugar mixture; blend well. Stir in 1/2 cup pecans. Cover with plastic wrap; refrigerate 30 minutes for easier handling.

3. Heat oven 375° F. Foe each cookie, with floured hands, shape about 1 tablespoon of dough around 1 caramel candy, covering completely. In a small bowl, combine remaining 1/2 cup pecans and 1 tablespoon sugar. Press one side of each ball into pecan mixture. Place, nut side up, 2 inches apart on ungreased cookie sheet.

4. Bake 375° F. for 7 to 10 minutes or set slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool 15 minutes or until completely cooled.

5. In small saucepan, melt candy coating over low heat, stirring constantly until smooth. Drizzle over cooled cookies.

4 dozen cookies.
